Texas Must-Do: Breakfast Tacos

One of the most important Texas food groups (alongside brisket and burritos) is the breakfast taco. Not to brag (although what's more Texas than bragging?!), but we have better breakfast tacos at our local gas stations than any "real" restaurant in the country. Well, if that gas station is Rudy's BBQ & Country Store, a classic Texas gas station/barbecue joint, that is. And we were stoked to realize that there's a Rudy's just down the street from our digs at the family reunion! So that y'all can experience this wonder for yourself, we're declaring Saturday's breakfast to be all about the breakfast tacos. We'll send some representatives over to Rudy's to bring us back the goods. Chris likes 'em standard: potato, egg and bacon. I love 'em Texas style: beans, potatoes and bacon. But however you like 'em, you're bound to love 'em.
